Caramel Chocolate Cookies

Serves Makes 30
Ingredients
- 3/4 cup white sugar
- 2 tablespoons water
- 250g butter, softened
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 1 Henergy Cage Free Egg
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1 cup milk chocolate chunks
- 1 teaspoon sea salt
Method
- Place the sugar and water in a small saucepan over a gentle heat.
- Stirring gently at times with a metal spoon, allow the mixture to come to the boil.
- Boil without stirring until the syrup changes colour to golden and then to a rich amber.
- Quickly pour the syrup into a baking paper lined tray and set aside to cool.
- Preheat the oven to 180 C.
- Beat the butter and sugars until pale and creamy.
- Add the egg and mix well.
- Mix in the flour and baking soda.
- Smash the toffee into small pieces and add to the mixture along with the chocolate.
- Place spoonfuls on baking paper lined trays.
- Sprinkle each biscuit with a little sea salt
- Bake for 15-20 minutes until golden.
- Cool on a wire rack and store in an airtight container.
