Spicy Apple & Fig Ciabatta Pudding

Ingredients

  • 4 size 7 Henergy eggs
  • 1 ciabatta loaf
  • 2 tablespoons butter
  • ¾ teaspoon cinnamon
  • 1 x 400g can apple pieces
  • ½ cup sliced dried figs
  • 1½ cup low fat milk
  • 1 tablespoon chopped, crystallised ginger

Method

  1. Preheat the oven to 180ºC.
  2. Slice the bread and spread with butter.
  3. Divide the apple slices among 6 or 8 small baking dishes, sprinkle with the cinnamon.
  4. Place 3 slices of bread on top of the apple, add the ginger and figs.
  5. In a medium-sized bowl beat together the eggs and milk.
  6. Pour over the bread and apple.
  7. Place in the preheated oven and cook until a knife inserted near the centre comes out clean, about 25 minutes.

Cooking tip

If you prefer, cook the whole pudding in one dish.
